This week's menu

GOAL: Get My Ducks In A Row! ...what does that mean anyway?

1. having one's ducks in a row would be a metaphor for having all of the bowling pins organized and properly placed before sending the next ball down the lane.

hmmm, pins were once called ducks, my new fact for the day!

2.Mother ducks often corral their young offspring into manageable straight lines before traveling over land or water.

Anyway, I haven't been to work in 16 days! Back to normal, here we go!

Things I never made last week:
Penne & Sausage 
Croque Madame Sandwich with Creamy Tomato Basil Soup

New Stuff:
Steaks with veggie rice
Salmon for Will, a new recipe found here, and tilapia for me with this balsamic cauliflower
Freezer Chicken  prep for next week
Then we will see what happens for the rest of the week :-)




Are your ducks in a row for the week ahead?

I find it odd that I have blogged twice about ducks, the last time was Feb 2011 "Be Like a Duck"

More importantly, have you watched Duck Dynasty? Oh holy smokes, I love that show. I watched it a few times, and didn't care for it, but now my eyes water when Si doesn't pretty much anything.

Tetrazzini

Recipe from Kay Hanks

Ingredients:
1 8 0z pkg. vermicelli
8 oz mushrooms
1/2 cup butter
2 10 oz cans of chicken breasts
2 cream of chicken soups
16 oz sour cream
grated Parmesan cheese

Break vermicelli in pieces. Cook until done. Saute mushrooms in butter. Mix chicken, soup, sour cream, and pasta. Add mushrooms in butter. Pour into sprayed dish. Or two if you want to freeze one ahead of time. I froze both. Sprinkle with Parm cheese. Bake uncovered on a cookie sheet at 350 for 20 minutes or until cheese is slightly browned.

If frozen, thaw by setting out on counter top for as long as you have time (not over 3 hours).
If you put in over frozen, dish will take longer to cook. Like 1 hour to cook. I took the dish out a few times to stir. Enjoy!

Freezing Meals???

I started looking into cooking in advance for my good friend Catherine. She is due in December with her first son, Luke!

BBQ pork/beef (I just use a beef or pork loin roast and a bottle of sauce and throw it in the crock pot all day)
Home-made bread loaves
Home-made pizza &/or just the dough
Macaroni and cheese
Chicken ala king

I even found someone named Ally (nestie) to send me and Catherine 26 pages of freezer friendly recipes!
