Food Network Yumminess!

Oh my heavens, we just got a TV in the bedroom. It's a tiny thing, but this morning I woke up early and watched Alex's Day Off. She made some yummy French Bistro Fare! There were major steps that might just send me overboard on a school night if I attempt these, but I gotta try them!

Turkey Burgers

I don't normal love turkey burgers, but these were great!
From Weeknight Grilling: Cuisine at home (Mag from Lowes)

For the Guacamole-
Coarsely mash:
1 avocado
1 T sour cream
1 T lime juice
salt to taste
Refridgerate.

For the Burgers-
1 1/4 lb. ground turkey breast
1 T EVOO
1 t salt
1 t dried oregano
1/2 t pepper
1/4 ground cumin
1/2 C shredded cheese
1/2 C canned black beans, drained, rinsed
4 slices cheese

Blend turkey, oil, and seasonings in a bowl for the burgers. Pulse cheese and beans in a food processor until coarsely chopped; add to turkey. Make burgers. Spray both sides with nonstick spray. Grill 5 min per side.
Toast buns.
Condiments: mayo, guac mix, ketchup, mustard, lettuce

Grilled Turkey Club Quesadillas


Taken from Kraft Food & Family

Tortillas
Mayo
chili powder
turkey breast (sandwich meat)
bacon
cheese

Spread half the tortillas with mayo and sprinkle with chili powder.
Layer one half with turkey, bacon, and cheese. Fold tortillas.

Grill 3 minutes on each side or until golden and cheese is melted.
