Black Bean Soup

2 cans black beans, drained and rinsed
1.5 c. vegetable broth (low sodium)
1 c. salsa
1 t. cumin
sour cream and shredded cheese for garnishing

Combine 1 1/2 cans beans, broth, salsa and cumin in a food processor. Blend until fairly smooth. Heat soup with the remaining 1/2 can of whole beans in a saucepan over medium heat until thoroughly heated. Put soup in bowls and garnish. (adapted from

I was unsure of the salsa part, but once blended you didn't even know it was there! We had this with turkey pitas.
