Penne and Smoked Sausage



I have no idea why I haven't add this to my blog. We use to eat this a whole lot. However, now we don't eat pasta for dinner, so we occasionally have it for lunch on Saturdays. This has been adapted from Simple and Delicious March/April 2006.

2 cups uncooked penne
2 pounds smoked sausage (we used that measure pre-healthy, it may be cut back to 1 pound now!)
1 1/2 cups milk
1 can cream of celery soup
1 cup mozzarella cheese
1 cup frozen broccoli

Cook pasta. Brown sausage in a skillet, over medium heat for 5 minutes. Drain. In a large bowl combine milk, broccoli, and soup. Stir in 1/2 cup cheese and sausage. Drain pasta, stir into sausage mixture.

Transfer to a greased baking dish. Cover and bake at 375 for 25-30 minutes or until bubbly. Sprinkle with remaining cheese or a little more. Bake, uncovered for 3-5 minutes longer until cheese is melted.

Makes about 6 servings.
