Sweet and Sour Chicken

Adapted from Allrecipes

Chicken strips
Green bell pepper chucks
Pineapple chunks
Waterchestnuts
Rice
Sweet and Sour Sauce (store bought)
Vegetable Oil
Baking Powder
1 Egg

I battered the chicken in a mixture of (1 tsp baking soda, 1 tsp salt, some pepper, 1 egg, 1 T vegetable oil). Fry the chicken in a wok or pan with more oil. Once cooked transfer to paper towel. Discard oil. Put the chicken, pepper, waterchestnut back in pan. Mix in sweet and sour sauce. (or save for dipping) Simmer for 10 min with lid. Add pineapple for the last minute. Stirring occasionally. Serve over rice. I used sushi rice, AKA sticky rice!
